Apricot Muffins Recipe
Cook time: 15 minutes
Temp: 375 F
Ingredients:
- 1 c all purpose flour
- 2/3 c whole wheat flour
- ½ c cane sugar
- 1 ¼ t orange zest
- 1 t baking soda
- ¼ t salt
- 1 c buttermilk
- ¼ c butter, melted
- ½ t vanilla
- 1 large egg
- 1 c finely chopped dried apricots
Instructions:
- Combine flours, sugar, orange zest, baking soda, and salt in large bowl, and stir with until well-mixed.
- Make a well in the center of the mixture.
- In another bowl, combine buttermilk, butter, vanilla and egg.
- Add wet mixture to flour mixture (in well), stirring until just moistened.
- Add apricots.
- spoon into greased muffin cups.
- Bake at 375 for 15 minutes.
