Coffee GingerBread, Recipe from Boulder's B&B

Instructions:

  1. Cream butter and sugar.
  2. In different bowl, beat eggs, molasses and ginger. Add to butter mixture.
  3. In another bowl, mix flour and spices; add to wet.
  4. Dissolve baking soda in hot coffee (leave room for bubbles).
  5. Add coffee to batter and beat everything together.
  6. Bake at 350 for 50 minutes.
