Fresh Ginger Gingerbread

  1. Beat honey and egg together.
  2. Spin ginger in food processor, then add honey and egg and spin again.
  3. Then beat in softened butter.
  4. Sift flour and spices into wet mixture.
  5. Dissolve baking soda in hot coffee (leave plenty of room at the top though, it will probably bubble) and add to batter.
  6. Pour into pan and bake at 350 for 50 minutes.
