Gluten Free Coconut Cookies with Ginger Recipe

Cook time: 17 minutes
Temp: 350 F

Ingredients:

• 2 C walnuts
• 1 C pecans
• 2 C finely shredded coconut
• 1/4 C canola oil
• 2/3 C yogurt (cow, goat, soy, coconut milk, or...)
• 2 t baking soda
• 1/4 t salt
• 2 eggs
• 1/3 C honey
• 1 T ginger powder
• 2 thumb-size pieces fresh ginger, grated
• 1/2 t cinnamon
• 1 1/2 C raisins

Instructions:

1. Mix everything except the raisins in a Cuisinart until mixed, but not turned into a paste.

2. Remove mixture from Cuisinart and mix in the raisins with a spoon (so they aren't chopped up).

3. Bake for 15-18 minutes at 350˚F.
