Homemade Pancakes Recipe
This makes about eight 3" pancakes.
- 1 c flour
- 1½ t baking powder
- 2 T sugar
- 1 egg
- 1 c milk
- 2 T butter, melted
- In large bowl whisk together flour, baking powder, and sugar. In separate bowl whisk together the egg, milk, and melted butter.
- Add the egg mixture to the flour mixture and combine. The batter should have some small lumps. Be sure not to overmix or the pancakes will be tough.
- Heat frying pan over medium heat until a few sprinkles of water dropped on the pan splatter. Butter pan.
- Scoop about ¼ cup of batter onto pan, spacing cakes a few inches apart. When the bottoms are brown and bubbles appear on the top (2-3 minutes), turn over. Cook until lightly browned.
