Southwestern Frittata

We generally serve this with Salsa Roja or Salsa Verde or both.

 

Temp: 375 F

Cooking Time: 60 minutes covered plus 15 minutes uncovered

Ingredients:

• 14 eggs
• ½ cup half & half
• 1 pound ricotta
• 2 blocks pepper jack, grated
• 1 bag frozen corn (about 3 cups)
• 3 onions, chopped
• 2 cloves garlic, pressed or minced (optional)
• 3 large red bell peppers, chopped(or red & green mix)
• 1 bunch spinach, washed & chopped
• 1 cup flour
• 1 tsp salt
• Freshly ground Black pepper
• 1 tbsp baking powder

Instructions:

1. Sauté onions and garlic in olive oil until translucent & begin to brown
2. Sauté peppers until they just begin to blacken
3. Beat eggs with half & half
4. Mix all ingredients and pour into buttered lasagna pan
5. Bake at 375°, covered with foil, for 1 hour
6. Remove foil and bake until done (about 15 minutes)
