Pancakes are great with all sorts of toppings! Whipped cream and/or fruit compotes are some of our favorites. The cooking time really depends on how many you cook at once, which depends on size and quantity of the skillets or griddles you use.

Total Time: 35 Minutes
Servings: 8 pancakes


  • 2 1/2 cups flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons sald
  • 2 2/3 cups milk
  • 2 eggs
  • 6 tablespoons oil (we typically use canola)
  • 1 1/2 teaspoon vanilla extract (optional)


  1. Preheat cast iron skillet on low.

  2. Mix dry ingredients in a separate bowl and set aside.

  3. Whisk together wet ingredients.

  4. Add wet mixture to dry, but DO NOT OVERMIX. Some lumps are good, and make the pancakes fluffy.

  5. Pour about 1/4 cup of batter on a well-lubricated (we use canola-oil spray) pan. Cook over medium heat until brown, flip and brown the other side.
