Southwestern Egg Casserole

Like a frittata, but better! Loads of veggies and flavor. We generally serve this with Salsa Rojas, Salsa Verde, or both!

Ingredients:

  • 14 eggs
  • 1/2 cup of half & half
  • 1 pound ricotta
  • 2 blocks pepper jack (grated)
  • 1 bag frozen corn (about 3 cups)
  • 3 onions (chopped)
  • 2 cloves garlic (minced)
  • 3 large red/green bell peppers (chopped)
  • 1 bunch spinach (washed & chopped)
  • 1 cup flour
  • 1 tsp salt
  • Freshly ground black pepper
  • 1 tbsp baking powder

Instructions:

  1. Sauté onions and garlic in olive oil until translucent & begin to brown

  2. Sauté peppers until they just begin to blacken

  3. Beat eggs with half & half

  4. Mix all ingredients and pour into buttered lasagna pan

  5. Bake at 375, covered with foil, for 1 hour

  6. Remove foil and bake until done (about 15 minutes)
